Baked Risotto RiceThis dish can be seasoned for absolutely any regional cuisine in the world! Use a cast iron pot for ease of stove top to oven, or transfer from a large stove top pot to greased, deep casserole dish for baking.

1 cup celery or bell pepper 1 tsp. dried thyme & oregano 1 T paprika Garnish with scallions |

1 tsp. cinnamon, curry powder & ground ginger 6oz. can tomato paste 1/2 cup heavy cream Garnish with scallions |
Southwest1 T cumin
1 T chili powder 1 T dried cilantro 1 tsp. black pepper 1 can corn, drained Garnish with fresh cilantro |
