Despite what you may expect, cooking a turkey is actually pretty simple. Whether you buy a fresh or frozen turkey (at least try to find a fresh turkey!) they come equipped with directions and all the extra parts you want to take out are pre-bagged and easy to remove and toss in the trash. Also, you want to buy a hen, not a tom (male), as they have more breast meat. You will need approximately 3 lbs turkey per person. Plan on cooking the turkey 20 minutes for each pound, so 300 minutes (5 hours) for a 15 lb turkey. If you have a frozen turkey start thawing 2 days ahead and keep it in the fridge the day before!
Remember to plan plenty of time for cooking and carving the turkey before dinner. Do not serve turkey undercooked as it can have serious health risks for your guests. Turkey should reach 180 degrees when poked to the center with a meat thermometer or there is a red button on all store bought turkeys that pops out when it reaches the correct temperature to be fully cooked. It is a good idea to have the turkey cooked at least 30 minutes prior to serving so you can make gravy as well.

In a medium sauce pan melt butter on low heat and add flour, stirring until flour browns. Add all other ingredients and bring to a low boil while stirring to incorporate flour mixture without lumps. (Heating the stock before adding helps to keep gravy smooth). Simmer at least 10 minutes before serving to thicken gravy. |
