Ingredients
2 quarts chicken or vegetable stock 1 pint cream or half & half 1 medium onion, chopped 2-3 cloves garlic, chopped 2 T butter or oil 2 bay leaves (discard before serving) Salt & white pepper to taste 1 can white beans, rinsed (if desired for protein) |
Asparagus Leek1 bunch asparagus spears cut into 1/2" pieces (discard last inch of stem)
1 leek chopped thin and washed thoroughly 2 T dried dill |
Broccoli Cauliflower1 bag chopped broccoli
1 bag chopped cauliflower 2 T dried oregano |
Autumn Vegetables4-5 carrots, chopped
1 head celery, chopped 2-3 large parsnips, peeled and chopped 2 cups sliced white mushrooms, if desired 1 T dried thyme, rosemary and sage |
Loaded Potato3-4 large potatoes, peeled and chopped
1 leek chopped thin and washed thoroughly 1/2 cup chopped fresh chives or 2 T dried chives |
