4lbs Yukon gold potatoes 4 T olive oil 4 cloves garlic, minced 1 medium onion, coarsely chopped 1/4 cup fresh rosemary, thyme or sage, minced Directions
Preheat oven to 350 degrees. Peel or scrub if you prefer skins left on. Cut potatoes into quarters and toss in bowl with 2 T olive oil, onions, salt & pepper. Bake for 30 minutes, then take out and carefully mix in 2 T olive oil, fresh herbs & garlic. Bake an additional 15-20 minutes or until potatoes are tender all the way through. |
