The best way to start building your bruschetta is by grilling the bread. Slice a loaf of ciabatta or soft French bread in 1" slices and brush both sides of each piece with olive oil. Grill on medium heat for 1 minutes on each side of bread. If you don't have a grill you can lightly toast the bread for a few minutes in the oven on a cookie sheet. You can grill the bread a day ahead of constructing your bruschetta.
Build bruschetta directly on your serving platter, so you don't have to move them & risk messing up the toppings. First, spread your cheese or dressing on all bread slices and then layer your toppings. Drizzle olive oil and sprinkle salt & freshly cracked pepper over the top of your platter. Garnish with fresh herbs before serving.
